Recommended to decant for one hour. Chateau de Nalys is among the oldest and most iconic estates in the Chateauneuf-du-Pape appellation in the Rhone Valley. Dating back to the 17th century and originally owned by the Nalys family, the estate was acquired by Domaine Guigal in 2017 and is currently undergoing organic conversion on its 52 hectares of vineyards. This wine blends Grenache, Syrah, Mourvedre, Counoise, and Vaccarese grown on red sandstone and pebble soils. After manual harvest and fermentation in wooden truncated cone-shaped vats, it ages 18 months in a mix of barrels, demi-muids, and foudres, then 6 months in concrete vats. The result is a complex wine with wild berry and dark fruit aromas, hints of leather, licorice, and anise. The palate is full, rich, and deep with firm yet integrated tannins and a long finish recalling licorice. Enjoy it with game stew.

Chateau de Saint Cosme is a historic estate in Gigondas, owned by the Barruol family since 1490 and currently managed by Louis Barruol, who converted the vineyards to biodynamic agriculture in 2010. The estate spans about 15 hectares with vines dating back to Roman times. This intense, full-bodied Gigondas is a blend of Grenache, Syrah, Mourvedre, with small additions of Cinsault. The grapes grow on limestone, marl, and Miocene sand soils. Fermentation occurs in concrete tanks using indigenous yeasts, followed by aging in barrels and concrete. The wine shows a fragrant bouquet of plum, berries, black cherry, and dried strawberry with hints of herbs, licorice, and cocoa. The palate is deep, rich, and fruity, with lively acidity, firm tannins, and a long finish featuring pepper and ripe fruit notes. It pairs well with grilled red meats or herb-roasted lamb.
